"My company is ISO 9001 certified. Our product has a datasheet with various parameters and their specs. Is there anything in the ISO standards that says that if you publish a performance spec for your product you have to validate this spec by measuring it? Or is this a choice up to the company?”

If an organization publishes a performance spec for a product it must validate its ability to comply with it. Check ISO 9001:2015 clauses 8.3.3, 8.3.5 and 8.6.
