The General Privacy Notice is, as the name suggests, meant to be a very generic template. The Employee Privacy Notice is specifically targeted at informing the employees about HR specific processing activities.

The Employee Data Protection Policy is a document meant to set up the way in which the company deals with employees personal data.

So, they all serve a different purpose.
