Thanks so much for your kind reply. I would like to extend the question as follows if I may:
We will be scanning the originals in two different electronic back ups as we are trying to gain physical space. The question is: Do we have to proceed to destroy the originals and therefore complete our records destruction form for every original document we destroy? or does the GDPR does not allow to destroy originals. I hope this makes sense.

This has to do with the way you deal internally with document management. The GDPR does not refer to destruction of original documents or replacing hard copy documents with electronic records. You should also check if under local laws there are specific requirements on how to keep electronic archives .
