We can start with the mandatory documentation required by ISO 9001:2015 and then, add those other documents that your organization considers useful, although not mandatory. If you check ISO 9001:2015 clause 4.4.2 you see that organizations are invited to consider what kind of other documentation they need (procedures, instructions, videos, records, …)
